How CO Brings Southeast Asian Flavors to the South

CO is a modern character sitting among traditional restaurants and shops on the famously historic King St in Charleston, SC. Renovated by owner Greg Bauer in 2011, the traditional shotgun-style building was simplified to create a swanky Southeast Asian-influenced restaurant that serves up Asian Fusion favorites with a twist. The building was renovated with design firm ReNew Urban to expose brick, pipes and other architectural elements. It is finished with an expansive bar for craft cocktails, community style tables, and tasteful photos of pin-up girls.

How It All Started

Greg Bauer, a former Marine, found his passion for Vietnamese food while growing his company, Saigon Catering. He partnered with the former executive chef, Anh Toan Ho, to develop Southeastern Asian dishes for the restaurant. Toan would cook recipes for hours in Bauer’s apartment, Bauer taking furious notes and then recreating the dishes himself.

 In 2014, Chef Masanori Shiraishi joined CO. With his influence, CO now prioritizes sourcing high-quality ingredients and securing sustainable commodities while focusing on bringing Japanese influences to today’s menu. CO currently has 7 locations in Atlanta, Raleigh, Myrtle Beach, Savannah, and Charlotte.

Signature Dishes

CO offers “fresh, robust flavors” and “signature cocktails made from scratch, designed to pair perfectly with a variety of dishes on the menu. Gluten-free and vegan options guarantee there’s something for everyone, every time you visit.”

Insatiable eater? There are 5 different rolls for you to try: pork and crab spring rolls with traditional nuoc cham, fresh summer rolls with hoisin peanut sauce, mango rolls with avocado and jalapeños, spicy edamame rolls served with ginger miso sauce, and tofu summer rolls with mint and rice vermicelli.

CO offers four types of dumplings, from traditional gyoza to beef & kimchi. CO also features pho bowls, drunken noodles, pad thai, and banh mis for both meat eaters (five spice pork belly) and vegetarians (lemongrass tofu).

A dinner with CO is only complete after a taste of their signature dessert: the Strawberry Spring Rolls. Traditional egg roll dough roll is stuffed with cooked strawberries and served with Nutella dipping sauce. For diners that want to take the experience home, CO offers their signature Singapore hot sauce for sale on their website. CO cuisine perfectly mimics its interior – a modern take on traditional Southeast Asian fare.
